My mother-in-law Loretta gave me this recipe... they're my wife's favorite meatballs from when she was growing up that her Grandma would make. This is an easy and great tasting crock pot recipe.

Ingredients

  • 2 28 oz cans whole tomatoes
  • 1 6 oz can tomato paste
  • 1 pound ground beef (80%)
  • 1/2 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 2 tablespoons parsley flakes
  • 1/2 cup breadcrumbs
  • 3 eggs
  • 1/2 cup Parmesan Cheese
  • 1 teaspoon pepper
  • 1 teaspoon salt

Instructions

Drain and blend the tomatoes. Add the tomato paste, salt, pepper, Italian seasoning, garlic powder and 1 tablespoon parsley flakes to the tomatoes to create the sauce.

Combine the ground beef, eggs, 1 tablespoon parsley flakes, garlic powder, breadcrumbs and Parmesan cheese in a mixing bowl and mix together. Roll into 1-2 inch meatballs and place in the crock pot.

Cover the meatballs in the crock pot with the sauce and cook on low for 7-8 hours.
