• 1 cup water
  • 1/2 cup quinoa
  • 1 small red onion, diced
  • 1 jalepeno, seeded an diced
  • 1 can black beans rinsed
  • 2 T lime juice
  • 2 T chopped cilantro
  • 2T olive oil
  • 2 oranges, peeled and segmented
  • 1 ripe diced avocado


Bring water and quinoa to a boil over high heat. Cover and simmer for 15 minutes over low heat. Meanwhile combine in a large bowl onion, jalapeno, black beans, lime juice, and cilantro. When quinoa is finished, Ross with olive oil and let cool. Add to onion mixture. Add in oranges and avocado. Season with salt and pepper
