The Best Damn Rum Cake in town!
- 1/2---3/4 cup chopped pecans 1 pkg Duncan Hines Yellow Cake mix 1 box INSTANT vanilla pudding [something like 1 3/4 oz—just standard size] 4 eggs 1/2 cup vegetable oil 1/2 cup rum 1/2 cup water
- Glaze: 1 stick butter 1 cup sugar 1/4 cup rum [I usually throw in a little extra] 1/4 cup water
Grease and flour bundt cake pan and distribute pecans in bottom.
Mix together all ingredients and mix on medium for 2 minutes, till fully blended. Never over mix.
Pour into bundt pan and bake at 325 for 50-55 minutes [should bounce to the touch or be golden brown]
Bring to a boil and simmer, stirring constantly for 2 minutes. Cool a minute or so. Prick a few holes in the cake to allow glaze to seep in. Pour over cake [gently lift sides away also to allow glaze to get to bottom too.
Cool for at least 30 minutes before serving.
