An EASY delicious tangy lemon pie (Do NOT try with other citrus, will not work)


  • 1 large lemon sliced (do NOT peel), 4 eggs, 1-1/2 cups granulated white sugar, 1 tsp vanilla, 1 stick softened butter and 1 ready made pie crust like Pillsbury or your own raw homemade crust


Bake the pie crust in a 9-inch pie plate according to package directions (400 degrees for 10 minutes). Allow the crust to cool. Meanwhile, reduce the oven heat to 350 degrees. Place the sliced lemon (peel and all), sugar, eggs, butter and vavilla into a blender. Blend until smooth. Pour the lemon mixture into the cooled pie crust. Bake at 350 degrees for 40 minutes. Allow pie to cool. Serve with whipped cream or Cool Whip.
