Nana's Pineapple Upside-down Cake



  • 1 1/2 cup flour (cake)
  • 2 eggs (cake)
  • 1/3 cup shortening (cake)
  • 2/3 cup white sugar (cake)
  • 1/2 cup milk (cake)
  • 2 tsp baking powder (cake)
  • 3/4 cup brown sugar (topping)
  • 2 tbsp butter (topping)
  • 1 can sliced pineapple (topping)
  • cherries (topping)


Preheat oven to 350. Grease cake pan. Place in bottom of cake pan the brown sugar and dot with butter. Place the pineapples in a single layer and add cherries for color. Mix cake ingredients as you would any cake batter. Carefully pour over pineapple slices. Bake at 350 for 35 minutes or until done. Turn out onto plate. Serve with whipped cream. Happy birthday Dad!
