Grandmother's Lemon Poke Cake
I have this recipe written in Grandmother's handwriting. This is how she did it.
Ingredients
- 2-3 T Lemon Juice
- 1-2 C Powdered Sugar
- Glaze
- 1 C Oil
- 1 C Water
- 4 Eggs
- 1 Small Box Lemon Jello (I have made it pink using strawberry and green using Lime)
- 1 Box Lemon Cake Mix
Instructions
Mix all cake ingredients together, pour into a greased pan, bake for 40-45 min. Grandmother made hers in a 9x13, I make mine fancy in a bundt pan. While cake is still warm poke holes into the cake with the back of a wooden spoon, or with a fork. Make glaze and brush on the warm cake. That way it gets all warm and melts into the cake. I sometimes brush some more on after the cake has cooled to make a nice crunchy sugary layer.
