Rhubarb Crisp

My German Nebraska grandmother was an unbelievable baker. Here is her recipe for rhubarb crisp. (It is addictive.)

Ingredients

  • 3 cups rhubarb, cut 1 inch thick (Or you can buy frozen and thaw)
  • 1 1/2 cups sugar
  • 1/2 teaspoon nutmeg
  • 3 tablespoons flour
  • 2 eggs, beaten
  • 1/4 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup oatmeal
  • 1/4 cup butter

Instructions

Mix sugar, nutmeg, 3 T flour and beaten eggs. Pour over rhubarb in 8" x 8" square baking dish. Mix brown sugar, 1/4 c. flour, oatmeal and butter, sprinkle over rhubarb. Bake 40 minutes at 350 degrees. (Notes: Any fruit can be substituted for rhubarb... but you might want to try the tart and sweet flavor combination of rhubarb first.)

Servings: 12, unless you're hungry.
